If your anything like me, Winter is a DANGEROUS time….
Full of cold days and even colder nights filled by the sound of my grumbling belly begging to be heated up by some warm buttery carbs, soups, crumbles, teas and cakes …. At this time there is simply no denying my european genes.
So this is when I need get smart, not tough! And make sure I have plenty of healthy scrumptious snacks and delights prepared for dire times!
This particular recipe was brought to me in a zip lock bag. Handed excitedly over be my beautiful yoga student Tania.
I was soo happy to munch on these after class….. My mouth and belly was in ecstasy …. and my Veganess left intact.
No Bake Chocolate Mint “Cookies”

80 grams of walnuts (2.8oz)
80 grams of medjool dates (2.8oz)
80 grams of shredded coconut (2.8oz)
1 tbs maple syrup
1 capful peppermint extract
Dark chocolate to coat the biscuits
Put the walnuts into you food processor and blitz on the fastest setting until a fine meal is made.
Add the dates to the food processor and blitz on the fasted speed until the dates are all chopped finely.
Add the remaining ingredients and blitz until combined
Or put the walnuts into the thermomix on speed 9 for 10 seconds
Add the dates and blitz on speed 9 for a further 10 seconds
Add the remaining ingredients and blitz on speed six for 8 seconds
Then roll in to balls and flatten into biscuits. Place on a lined baking tray and put in the freezer for 15 minutes.
Melt the chocolate in a small but deep bowl, using a fork dip the biscuits into the chocolate and put back on the tray.
Pop back in the freezer until ready to serve!
