These carrot cake bites certainly deliver on flavour and is a great base recipe to add your superfoods to!! We have made a few suggestions that certainly add to the deliciousness of the recipe. CARROT CAKE BITES
gf/df/vegan/refined sugar free – makes approx 20 bites
Ingredients:
1/2C almond meal
1/2C walnuts
1C desiccated coconut (more for rolling)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1C deseeded, chopped dates (any soft date will suffice)
1 carrot, peeled and grated
Juice of 1/2 an orange
Superfood suggestions:
2 tbsp Chia seeds
1 1/2 tbsp Vanilla protein powder
1 1/2 tbsp Mesquite
SUPER FOOD FACT
Mesquite is high in protein, low on the glycemic index, and a good source of soluble fibre, meaning it digests relatively slowly and does not cause spikes in blood sugar. This gluten-free powder is also a good source of calcium, iron, lysine, manganese, zinc, and potassium.
What to do:
Place almond meal, walnuts, coconut and spices in food processor and process roughly. Add dates and process well. Add carrot and process until the mix becomes a sticky ball which will stick together when pressed. Add the orange juice a little at a time until the mixture forms a sticky consistency.
Take your mixture out of the food processor and place in a bowl, fold through your superfoods of choice.
Take tablespoons of mixture and roll into balls. Decorate with desiccated coconut if desired. You can store these in e fridge for up to 3 days.
